While traveling back to Oregon to graduate from WCI, it was decided that we needed to do some sight seeing. Along the way we went to see the Multnomah Falls. It was beautiful.

Tuesday was the first day of Autumn, and I felt this huge urge to bake with pumpkin. I went to the local grocery store, and bought some easy Pumpkin Pie Mix.. And then made cookies with it to celebrate.

My boss at Horse Creek Deli & Bakery has had me do pretty much everything in his bakery department, and there's no complaints over here! I've enjoyed making cookies, pies, cakes, pastries, and even..

So this week in class we worked with sugar.

No, not the kind that you add to cakes. The kind that gets really hot, and you work with it.. With your hands.


This is my final project for school: a sugar show piece. It was hot to make (literally), but I love how it came out.

And so, tomorrow ends my culinary days here at Le Cordon Bleu. How time flies~ I have three more weeks of just general education classes before I head home for my externship. ♥

Braving weather temperatures at a record temperature highs of 105-107〫F, chocolate was melted, messed up, and made again. In the end, everything turned out great despite Mother Nature's curve ball. In our Candies class, we made truffles, caramels, fudge, brittle, toffee, and gummie chews.

I've definitely kept busy this week. Candies in the morning, and cooking at night. 6 am - 9 pm at school makes for a long day, but it's still been fun and insightful. I even got to grill in the cooking class. Something I can say I've never done before.

I don't think it's a secret what inspired me for my wedding cake project. We were assigned to make a wedding cake with a certain ammount of requirements, and I dove in.

Overall, this cake turned out great. I enjoyed decorating it, as well as making the inside. Green Tea cake, with a Red Bean Paste filling. Mmmm. Hopefully the kids at tonight's class will enjoy it. Sad this was my last day of cake class though.. Next stop, Candies class.

This week's cake theme? Children's chocolate cake. Everything we used to make the cake, other then the royal icing, had to be chocolate themed. What the teacher didn't specify though was the age group.. So I went Twilight.

Summer break is here. ♥ It was such a relief once Thursday was done and over with even though all I pretty much did on that day was make breads and cookies. Project went well, and the chefs seemed to like 'em so I'm happy with how it turned out.

Other then going to see Transformers 2, I've been cleaning with all my extra spare time. My mom and grandma are coming tomorrow, and are going to be hanging around for a week. I'll probably be pretty quiet on LJ until they're gone.

Week 2-3 of Cake Assembly & Technique class. Really haven't been able to update lately due to family in town and just plain busy-ness going down at school. However, here you guys go.

The first week of cakes class came and went like the snap of a fingers! While it was fun, this class is also a lot harder then most of the other classes we've had in the past. That could be because while we're baking cakes, we're also assembling and making icings. Still, I had fun and am looking forwards to the next two weeks.


Black Forest Cake; a chocolate cake with whipped cream and cherry filling. This cake was probably my best of the week.

Say hello to the Junior Mint Mousse Cake! A chocolate sponge cake with white chocolate mint filling, and then dark chocolate glaze on top. Garnished with Junior Mints as well as white chocolate~ Yes, all edible.

Keep your fingers crossed and keep me in your prayers this weekend, I will be finding out Monday or Tuesday if I have an externship at the place I want to work or not. HELL YEAH. Also.. Starting next week ladies and gents, we will be doing cakes in class. So you can bet there will be more pictures.

So our new class, Lamination Doughs, and our new teacher, has definitely stepped it up a knotch. It feels like we're on Top Chef, running around with so much to do in a week. Still going strong though, she seems to like my stuff. ♥

This week we worked with Puff Pastry and made quite a few things that I had never heard of before..

Here's the coffee cheesecake I made in class. A lot of people seemed to have a problem getting the right consistancy, but chef really liked mine ♥ It's coffee flavored.
